2) 2 c firm white bread, diced
3) 3/4 c olive oil
4) 3 garlic cloves, crushed
5) 1 t salt
6) 12 to 15 oil-packed flat anchovy fillets,
rinsed, dried and finely chopped
7) 2 T lemon juice
8) 1 t fresh ground pepper
9) 1 egg
10) 3/4 c shredded Parmesan cheese
Wash, dry, wrap & chill 1)
Saute 2) in 1/4 c 3) & 4), shake pan, cook over med
heat till light browned and crisp, drain.
In salad bowl...
Break 1) into bite-sized pieces.
Add remaining 3), toss well to coat.
Add croutons and 5) to 8)
Break 9) into bowl, toss again
Add 10), toss again.
