3) 1 pork hock, skin removed
4) 2 lg carrots, sliced
5) 2 med onions, chopped
6) 2/3 bunch celery, sliced (include leaves and center)
7) salt & pepper
Saute 5) & 6) in a little oil.
Add 4)
Add 3) and water to cover, season.
Bring to boil, simmer low.
Add 1) and adjust water depending on thickness as it cooks, stir frequently.
Simmer 2 hours. Adjust seasonings.
