The Best Banana Bread





1)  1 c butter
2)  1 c brown sugar
3)  1 c white sugar
4)  4 eggs, well beaten
5)  2 t vanilla
6)  4 t cinnamon
7)  1/2 t salt
8)  1 t baking powder
9)  2 t baking soda
10)  4 c flour
11)  1 c chopped walnuts
12)  1 c flaked coconut
13)  1 c golden raisins
14)  8 lg or 10 med bananas

Cream 1)   to   3)
Add 4)  5)   &  14)
Stir 6)   to   10)
Gradually add to creamed mixture.
Stir in 11)  to  13)
Spoon into 2 buttered 5x9 loaf pans (1 hour to 1.5 hours)
or 32 almost full muffin tins
(18-22 mins), or 12 mini loaves (35-40 mins).
Bake 350 till toothpick clean.  Cool on rack 10 min.

💜  This bread smells like banana cream pie or banana flavored baby food when it is baking!  Yummy!
💜  For the yummiest banana flavor I let the bananas go about 50% brown on the counter, put in freezer and freeze solid, then thaw and mash.  It has almost a fermented banana liquor flavor!
💜  Here's a tasty one you just have to try!  I reduced the bananas to 5, coconut to 1/2 c, swapped out the walnuts for pecans and added 1/3 c ground flax meal, 1 c pureed pineapple, 1/3 c chopped pumpkin and sunflower seeds.  I chopped and pureed using a small food processor.
