Down-Home Southern Bacon Gravy

1)  3 T bacon fat
2)  1 med onion, finely chopped
3)  2 shallots, finely chopped
4)  6 strips bacon, cooked till crisp and crumbled
5)  1 t paprika
6)  1 T cornstarch
7)  2 - 3 T flour
8)  2 c chicken broth
9)  2 c milk
10)  salt & pepper

Melt  1)  Saute  2)  and  3)  low about 5 min.
Add  4)  cook another 5 min.
Add  5)  cook another min.
Mix  6)  to  9)
Add to pan along with salt and pepper to taste.
Simmer 5 min till thick.
Use hand blender to smooth out the gravy.
Store in freezer bags and take out to thaw when you need them.


💜  You could easily turn this into Sausage Gravy by browning up 1 cup sausage meat and using the liquid fat fat and meat in place of the bacon fat and strips.

💜  Serve with Buttermilk Biscuits...Yum!
