1) 1 recipe Flaky Pie Crust
2) 1 can 28 oz sliced peaches, drained, sliced thin
3) 4 c small wild blueberries, thawed
4) 1 c sugar
5) 1/3 c flour
6) 1/2 - 3/4 t cinnamon
7) 2 T butter
Get 1) ready to filling stage.
Put 2) & 3) in separate bowls.
Whisk 4) to 6)
Split this mix between 2 bowls of fruit, mix well.
Place blueberries in shell first.
Lay peach slices side by side in layer on top of blueberries,
spread sugar mix from peach bowl over top.
Cut 7) in small pieces and dot top of filling.
Pat on top of fruit.
Cover with top crust, cut slits for vents.
Use left-over dough to cut out shapes with cookie cutters.
Bake 425 for 40-50 minutes till top is golden.
When edges are done about 20 min. into baking, place heavy duty foil piece over pie
with center cut out, crimp sides of foil around edges to seal.
Protects edges from getting too done while letting center brown.
