1) 1 unbaked 9" pie shell
2) 1 1/2 c cooked pureed carrots
3) 3/4 c brown sugar
4) 2 large eggs
5) 2 c canned milk
6) 1/2 t salt
7) 2 t cinnamon
Mix 2) to 7)
Pour into shell.
Bake @ 400 for 15 min.
Reduce heat to 350 for 45 min longer.
This recipe is from a booklet called Canadian Prairie Homesteaders although I have altered the seasoning just a bit. Cool info and pictures of early 1900 settlers in Manitoba, Saskatchewan and Alberta.
Very Tasty! Similar to pumpkin pie.
