Potato Bread - Woodward's Food Floors


1)  4 1/2 t active dry yeast
2)  2 c warm water (1 1/2 c cool + 1/2 c boiled)
3)  1/4 c sugar
4)  1 T salt
5)  1 c mashed potato
6)  1/2 c butter, soft
7)  6 1/2 to 6 3/4 c flour

Sprinkle  1)  over  2)  add a pinch of sugar and whisk.  Stand 10 min.
Add  3)  &  4)  till dissolved.
Add  5)  6)  &  3 c  7)
With electric mixer, beat med speed till smooth, 2 min.
Add rest of  7)  by hand.
Knead till smooth and elastic about 10 min.
Rise in buttered covered bowl 1 hour till doubled.
Turn out onto floured board and divide in half.
Shape each piece into loaf, rolling up jelly-roll style.
Place in buttered loaf pans, rise 1 hour.
Oven 400 bake 35 - 40 min till deep golden brown.
Remove from pans and cool on racks.
