Cheese & Onion Souffle

1)  4 eggs
2)  1/2 c butter
3)  4 T flour
4)  1 t salt
5)  pepper to taste
6)  1/4 t dry mustard
7)  1/2 c milk
8)  4 oz old cheddar cheese, grated
9)  3/4 small onion, finely chopped

Separate 1)
Melt 2), remove from heat.
Add 3) to 6), stir till smooth.
Add 7), stir.  Return to heat.
Add 8) and 9), stir.
Remove from heat.  Beat yolks till smooth and fluffy.
Stir into cheese mixture.
Beat whites till soft, moist peaks form.
Fold 1/2 into mixture, then other 1/2.
Pour over spatula into a greased souffle dish.
Bake 350 for 40-45 minutes.
