1) 1 c butter, softened
2) 2 1/2 c white sugar
3) 4 large eggs
4) 1 c buttermilk
5) 1/2 t baking soda
6) 1/4 t salt
7) 3-4 t vanilla extract
8) 3 c flour
Oven 325. Grease 2 loaf pans.
Use hand mixer to cream 1) & 2) till light and fluffy, 3 min.
Add 3) one at a time, mix after each.
Whisk 4) to 7)
Add 1 c 8) to butter till just combined.
Add 1/2 buttermilk mix till just combined.
Add 1 c 8) mix till just combined.
Add last 1/2 buttermilk mix till just combined.
Add final 1 c 8) mix till just combined ( do not overmix).
Spread batter in 2 pans.
Bake 50 - 75 min till toothpick comes out clean except for a few moist crumbs.
Cool 5 min in pans before removing to rack.
