1) 1 1/4 c buttermilk
2) salt & pepper
3) 1 T garlic powder
4) 2 t paprika
5) 3 lb chicken thighs and drumsticks
6) 2 c flour
7) 2 t baking powder
8) 1 3/4 c Crisco oil
Whisk 1 c 1) with 1 T salt, 1 t pepper, 1 T 3) & 1/4 t 4) put in Ziploc bag.
Add 5)
Chill overnight.
Oven 400, rack in middle.
Whisk 6) & 7) with 1 t salt, 2 t pepper, 3/4 t garlic powder, 3/4 t paprika
Add rest of 1) to flour mix with fingers till small clumps form.
Dredge chicken in flour mix, pressing onto chicken to form a thick even coating.
Place on plate skin side up.
Heat 8) in electric frying pan to 375.
Place chicken in skin side down cook till golden brown 3-5 mins.
Flip and cook 2-4 mins longer.
Transfer to wire rack in baking sheet.
Bake 15 -20 mins.
Rest 5 mins.
