Minestrone



1)  2 med onions, ch
2)  2 leeks, sl
3)  2 fennel bulbs, ch
4)  4 stalks celery, sl
5)  4 carrots, sl
6)  4 cloves garlic, sl
7)  1 can whole tomatoes
8)  4 c fresh spinach
9)  2 T pesto
10)  1 T seasoning salt & 1/2 t pepper
11)  2 T dried basil
12)  1 T veggie boullion
13)  1 T vegeta
14)  1c shredded parmesan
15)  2 t sugar
16)  small pasta like orzo or alphabet

Saute  1)  to  6)  in olive oil.
Add rest (except pasta and cheese) and water to more than cover, about 8 c.
Add parmesan and stir till melted.
Cook pasta and add some to each bowl of soup when serving.
