Southern Style Biscuits & Sausage Gravy

 


1)  1 batch - 12 - buttermilk biscuits

2)  1 lb sausage meat, I used pork seasoned with basil and fennel 

3)  6 T flour

4)  3 c milk

5)  1 c whipping cream

6)  3 T + bacon fat

7)  1/4 c finely chopped shallots

8)  2 dashes W sauce

9)  1 t salt

Sauté 7)  in  6)  till translucent in 4 qt saucepan.

Add 2)  stir to break up meat lumps.

Add more  6)  if not enough fat left in pan.

Season and sprinkle with 3)

Lightly brown the flour on the meat.

Add  4) n and  5)

Whisk and simmer slowly to thicken, 15 min.

To serve split a biscuit and spoon gravy over.
