2 loaves
1) 1 c water
2) 1/2 c butter
3) 1 c buttermilk
4) 1/2 c millet seed soaked 45 min in boil water to cover, drained
5) 1 c 8 grain cereal (Bob's)
6) 2/3 c oat bran
7) 4 1/2 t active dry yeast
8) 1/3 c water (make by mixing 1 1/2 c cool water with 1/2 c boiling)
9) 3 1/2 c all purpose flour
10) 1/4 c barley flour
11) 1/4 c spelt flour
12) 1 c whole wheat flour
13) 1/2 c brown sugar
14) 2 rounded t gluten
15) 2 T ground flax seed
16) 2 t salt
17) 1 egg
18) 2 t sesame seeds
19) 1/2 egg white
Heat 1) & 2) to boil.
Add 3) to 6), stir well, cool till warm 120F about 20 min.
Stir 7) & 8) with a pinch of sugar, let proof 10 min.
Whisk 1 c 9) to 16)
Add milk mix and yeast mixes. Beat 2 min.
Add 17) and 1 c 9). Beat 2 min.
Add enough 9) 1/2 c at a time to make a soft dough.
Knead till smooth & elastic 8 - 10 min.
Cover and rise 1 hour.
Divide dough in 1/2, place in buttered loaf pans, cover and rise 1 hour.
Whisk 19) brush over top of loaves, sprinkle with 18)
