1) 1 1/2 c flour
2) 1 t baking powder
3) 1/2 t salt
4) 1 1/4 c sugar
5) 4 eggs, room temp
6) 1 1/2 t vanilla
7) 2 T lemon zest + 2 t juice (2 lemons)
8) 12 T butter, melted and hot
9) 1 c icing sugar
10) 1/2 t lemon zest + 5 t juice
11) pinch salt
Oven 350
Grease & flour 6 - 1 c mini bundt pans
Whisk 1) to 3)
Process 4) to 7) till combined 30 sec.
While running, add 8) till combined 30 sec.
Transfer to large bowl
Sift 1/3 flour mix over egg mix, whisk to almost combine.
Repeat twice more.
Pour into pans, tap to release air bubbles.
Bake till toothpick clean about 20 mins.
Cool in pans a few minutes then put on wire rack.
Whisk 9) to 11)
Pour over cakes.
