Down-Home Southern Peach Cobbler

         




1)  4 c peaches cut in 1.5 inch chunks (about 10)
2)  1/4 c sugar
3)  1/4 c dark brown sugar
4)  1/4 t cinnamon
5)  1 t fresh lemon juice
6)  2 t cornstarch
7)  2 c flour
8)  1/2 c sugar
9)  1/2 c dark brown sugar
10)  2 t baking powder
11)  1 t salt
12)  3/4 c butter, cold cut in pieces
13)  1/2 c boiling water
14)  1 T sugar

Oven 400.
In large bowl mix 1)  to  6)
Pour into buttered 2 qt baking dish.
Bake 10 min.
Mix 7)  to  11)
Cut in  12)  till like coarse meal.
Stir in  13)  till just combined.
Spoon topping onto peaches.
Sprinkle with  14)
Put casserole dish on baking sheet or put foil underneath in oven.
Bake 45 mins till batter is golden brown and looks dry.

💜      This cobbler would win the blue ribbon at a state fair, I betcha!
