1) 3 T veg oil
2) 1 jar Malaysian Laksa paste
3) 6 c chicken broth
4) 1 T brown sugar
5) 1 1/2 lb chicken breast or thigh meat in bite size pieces
6) 1 lb raw prawns, peeled
7) 2 c thick coconut milk
8) 12 fish balls
9) 1 - 2 c fried tofu, sliced
10) 3 - 4 c fresh bean sprouts
11) 1 - 1 1/2 lb thin rice noodles
12) lime juice from 1 - 2 limes
13) fish sauce to taste
14) sambal chili paste
15) fried shallots
16) lime wedges
In dutch oven or heavy soup pot saute med-high 1) & 2) till fragrant.
Add 3) & 4), boil.
Add 5) sim 4 min.
Add 6) cook 1 - 2 mins.
Add 7) to 9) simmer till heated through.
Add 12) to taste.
Add 13) to taste 1 t at a time.
Heat water t boil in separate pot.
Add 11) heat 2 min, drain.
divide noodles into bowls, ladle soup over.
