Hearty Red Lentil Soup


1)  1 large onion, chopped
2)  1/2 a bunch of celery, the inside 1/2 with heart and leaves, thinly sliced
3)  6 carrots, thinly sliced
4)  2 c dry red football lentils
5)  2 bay leaves
6)  2 T better than bouillon veggie flavor
7)  1 T seasoning salt
8)  1 t pepper
9)  3 T chopped parsley
10)  zest and juice of 1 lemon

Saute  1)  &  2)  in a little oil till onion is transparent.
Add  3) and water to cover.
Add  4)  and rest except  10)  and cover with more water.
Bring to boil, reduce heat and simmer for 1.5 hours, stirring occasionally to keep from sticking.
Add  10)  and simmer a bit longer, adjust salt & pepper
