Potato Patties
Note: Quantities are approximate.
2 c. left-over mashed potatoes
1/2c. chopped onions, lightly sautéed in butter
Salt & Pepper to taste
1/2c.-1c. shredded cheese
1 egg, whipped
1/2c. flour
Mix it all together, form into 4 patties. Generously grease
skillet
with butter and fry over medium heat until heated through, nicely
browned on both sides and cheese is melted.
Lovely with breakfast!
