Cindy's Tomato Cobbler

 


Cindy's Tomato Cobbler 


Filling

1)  5 medium tomatoes halved, seeds removed, 1 inch chunks

2)  1 medium onion, thinly sliced

3)  4 cloves garlic, crushed

4)  1 1/2 c mushrooms, 1 inch chunks

5)  4 t Italian seasoning

6)  2 T olive oil

7)  1 t salt

8)  1/2 t pepper

9)  1 t brown sugar

10)  1 T tomato paste

11)  1 heaping T flour

12)  butter

Saute 2)  in 6)  till soft.

Add  4) saute a few minutes.

Add rest except  11)  &  12)

Saute low stirring till juicy.

Add  11) 

Put in 2 quart casserole.

dot with  12)


Topping

13)  1 1/2 c flour

14)  1 heaping T baking powder

15)  1/4 t salt

16)  1/2 c cold butter, cubed

17)  3/4 c buttermilk

Mix dry.

Cut in 16)  till size of small peas.

Add  17)  mix with fork then spatula to bring together.

Drop on top of casserole by 1/4 cup measure.

Makes 9 biscuits to cover top.

Bake 350 for 50 min.
