Chicken Cacciatore

1)  6 chicken thighs, bone in, skin off

2)  2 T olive oil

3)  salt

4)  pepper or 1/2 t crushed red pepper flakes

5)  2 med or 1 large onion, 1/2'd and sliced

6)  8 cloves garlic, 1/2'd

7)  2 T flour

8)  1 cup dry white wine

9)  1 28oz can whole tomatoes, 1/2'd with juice

10)  2 T tomato paste

11)  3 bay leaves

12)  2 - 3  heaping T Greek or Italian seasoning  (I used Greek, no thyme in it)


Heat  2)  in deep cast iron pan or Dutch oven.

Add  3)  to  5), saute till onions almost transparent.

Add  6) saute till onions done.

Add  7)  and stir well.

Add  8)  and use rubber spatula to scrape bottom of pan while sauce thickens.

Add  9)  to  12)

Snug thighs down into sauce, put lid on and bake at 375 for 50 min.

Turn oven off, let sit in oven 10 more min.

Serve over broad noodles with grated Parmesan cheese..
