Meatballs



1)  3 lb lean ground beef
2)  6 slices white bread, torn, crusts removed
3)  2 - 3 eggs, beaten
4)  1 c shredded parmesan
5)  3 T olive oil
6)  1 head garlic, crushed
7)  zest of 2 large lemons
8)  2 t salt
9)  1 t pepper

Mix all.
Form into balls.
Bake 350.

36 - 1 t  balls - 20 min
24 - 1 T balls - 30 min
15 - larger balls - 45 min and turn once

Great Idea !
When forming T sized or larger balls put diced ham, provolone or capicollo in center.
Make a hole in ball , fill, close up tight so it does not leak.
