Tomato Sauce
1) 1 lg onion, chopped fine
2) 1/2 head garlic, cr
3) olive oil
4) 1/2 t each salt & pepper
5) 1 t sugar
6) 2 cans San Marzano tomatoes, run thru food mill to remove pulp & seeds
7) 1 c red wine (optional)
8) 3 T tomato paste from a tube (optional)
Saute 1) to 3) add 4) & 5)
Add rest, simmer low 1 hour.
Add more salt to your taste.
OPTIONAL - Add a handful of Italiano seasoning or a mix of fresh or dried basil & oregano
💜 This tomato sauce without all the options is very bright and tastes like fresh sweet tomatoes.
Meatballs
1) 3 lb lean ground beef (or ground chicken dark/white meat mix)
2) 3-4 slices white bread, torn, crusts removed dampened with 1/4 to 1/2 c milk or buttermilk (if using ground chicken add 1 c dry breadcrumbs)
3) 2 - 3 eggs, beaten
4) 1 c shredded parmesan
5) 3 T olive oil
6) 1 head garlic, crushed
7) zest of 2 large lemons
8) 2 t salt
9) 1 t pepper
10) 2 T chopped parsley
Mix all.
Form into balls.
Bake 350.
36 - 1 t balls - 20 min
24 - 1 T balls - 25 - 30 min
15 - larger balls - 45 min and turn once
After meatballs are cooked you can add them to tomato sauce and simmer very low 1 hour. Or serve your meatballs and sauce separately.
Great Idea !
When forming T sized or larger balls put diced ham, provolone or capicollo in center.
Make a hole in ball , fill, close up tight so it does not leak.
